NO question... QUIET. I bought a fairly speedy bow and then add heavier than normal arrows, all sorts of gadgets etc to quiet it down. I end up with a mid range speed bow and whisper quiet shooting.

I've been around a lot of quiet compounds. So quiet all you can hear from a distance is the metallic CLICK of the mechanical release cutting loose (what a noisemaker THAT is!). But none are anywhere near as quiet as my longbow

I shoot 265 and that's plenty fast. Very quiet too. The speed freaks are the same guys with the fast cars and the pit bull. I think they are trying to compensate for something!

Quiet over speed for deer hunting, but I like to compromise and try to get a little of both only because I practice out to 60 yards so I need a little more umphhh for target shooting which plays a part in what bow I shoot.

I think the question was which characteristic of a bow do you prefer, quietness or speed. Accuracy is more dependent on the shooter, whether you have a quiet bow or a fast bow.
