deer spoiling
 

At what temp. would you say deer would begin to spoil. I shot 2 deer last weekend and it decided to warm up into the mid 40's today. will I be alright or should I go pack them full of ice during my lunch break?

Deer will spoil at any temp above freezing , the higher the temp the faster it spoils . Use the ice to be on the safe side .

Depends is the hide on? Are they in the shade/sun? Are they inside? If they are inside. If it is getting down to 30 at night and 45 during the day and they are hanging in the shade they will be OK.

At 45 degrees I'd have the deer skinned and put a fan on it if I had to let it hang overnight. Usually I never let my deer hang. Skin as soon as I get homeafter taking pictures and by then rigor has set in. Usually quarter right away and put meat in plastic containers and in the fridge. Usually cut and package within 3 days. I have had several people tell me it's some of the best venison they've ever had. Do a lot of fat trimming also before freezing. I think it's the corn and soybean diet, the fat on the top layers is sometimes amazing. The neighbor's Chesapeake loves it. You see him in some of the pictures. He comes a running when he sees me back my truck in to the garage.

Just put in on ice as soon as possible no matter what temp.
Thats what I do anyway. Of course living in Texas I usually have
little choice.

I'v left them several days before with daytime temps well into the 40's. Long as nights are cooler & its in the shade I wouldn't sweat it.
Put a bag of ice in one in early oct. Was low 30's at night but close to 50 in the day. It was out there 4 days & the ice wasn't melted. IMO the most important thing is getting it cool as soon as possible. Dont know the temp of a fridge but would think its around 40.
