I would be worried about scent all over the target. With a decoy you really shouldn't touch it with your bare hands, and if you do it should be wiped down. A target would be covered with scent.
I have thought about trying it before though.
The other issue would be weight, I think targets weigh quite a bit more than a decoy, and are harder to carry.

Deffinatly cover the scent. I saw it happen to some guys on Drury Outdoors one time. Soak the target in scent killer or what ever product that you use and after that let it sit outside for a day or two then make sure not to touch it with your bare hands after that.

I did it last year with mine, I left the legs at home.
I placed the decoy in some high grass, it looked like a real doe bedded down.
It did not draw any bucks but a doe did come out of the woods and came within 15 yards of the decoy and milled around for about 10 minutes before she left.
you will never know if it will work unless you try it.
