Don't know what your missing dog1! Have you ever tried it? AV is right, it has a texture a lot like crawfish and is very mild in taste. I've served it to people who didn't know who it was with other fish, and it was gone before the other stuff. However, I still like crappie and walleye better.
If you have tried it and didn't like it, chances are good the preparer made the same mistake that I made my first time- soaking it in water after you clean it. If you soak gar meat in water/salt water like other fish you take, it'll ruin the meat. Just clean it and cool it down asap. Then when you get it home, clean it under a cold tap to get all the nasties off of it and freeze it or cook right away. Goooood stuff! My wife and kids beg me for the stuff. |

I've heard from several people that have tried it that it was good to really great. I'd try it once, but if it's that much like crawfish, I'm sure I'd like it.
