Ha, I wouldn't limit myself to one knife
 
And the knives don't have to be long military blades. I wear one twenty year old Schrade on my hip; two different sizes of pocket knives in my pockets; one backup cheap small pocket knife in my day pack.
Gutting and skinning a deer, one really doesn't need a very big knife.

If I were to only take 1 blade on a hunting trip, it would probably be myWolf Creek Forge Kephart. 4 3/4" blade and a little thick at 1/8" but it is a good multi purpose blade. Since it is a little on the thick side, I can batton small kindling IF the need should arise. These pics are from when it was new. It now has formed a nice patina so it no longer has the bright shiny look.

I like my Gerber LMF, its on the heavy side, but can stand to be abused.

for me it's a sharp knife
 
One of the best knives I have has a blade of carbon steel. Blade is only four inches long. It's game not war. Was shrapened up quickly. Cost less than ten dollars. Wasn't made for gutting or working on a deer. Has a wooden handle.
Most hunters/survivalist wouldn't think of using it. A knife sharpener would. And for me, that has made all the difference.

I HAVE A BUCK 639. HEAVY BLADE , so it will take some punishment. serated on one side . can cut wire ,chop wood if neccesary. sorry no pics
