Default Your ONE quartering/de-boning knife

Hi, everyone:

I've processed a couple of deer so far this season, and I've come to the conclusion I need to upgrade my knives.

I use a Havalon for field dressing/skinning. No big problems there.

Let's say your deer is hung up and skinned. Now you have to get to the job of quartering and de-boning. What is the ONE knife (if you had to choose only one) that you would use for these two jobs? I need to make Christmas wish list out.

This is the one I use, bought it about 3 years ago...It's made like the Schrade SharpFinger, good knife and made in the USA...

From field dressing to butchering, I use a 110 Buck folding knife.
I also run the blade across a leather barber strop a couple times during the butchering process to hone the blade.
