I was in the same place last summmer. I chose the 30-06 in a remingington and have not regretted it at all. most versitle round out there and won't kill the wallet or the shoulder.

Get the 300 as it has more power. There are a bunch of things you can do to tame recoil suck as recoil pads, muzzle breaks, mercury cylinder in the stock. I carried an 06 for years until a friend shot a moose with his 300 when I was there. I now own a 300wthby kicks like a mule but does it ever kill. I say you should use as much power as you can possibly handle when you hunt. You don't have to use your big gun to practice with you can get a lighter caliber in a similar gun such as a 243. The ammo is fairly cheap for them as it is for 300 win. if you watch you can get them for about $20 a box at Walmart after the season is over at least we can in London. That's my opinion anyway.

If your going to buy a .300 mag, shoot it as often and as much as you can. If you can't afford the ammunition buy a reloader, they come in all price ranges and will give you something to think about when your not shooting. After you shoot it for a while you'll notice the recoil less and less. Shoot the same load you plan on hunting with, that way you'll know how the bullet will react over different ranges.
Last year me and a friend did a lot of practice shooting in prep. for a Caribou hunt,he shot a 30/06 and I shot a .300 win. mag.
At 100 and 200 yards we were pretty much equal, but at 250 and 300 you could really see the difference, the 30/06 was dropping at a much faster rate.
We both filled our Caribou tags and all were shot under 100 yds. so was all the practice for nothing, I don't think so. Three heart shots and one neck shot.
Don't let the heavy recoil talk change your mind, Shoot alot, wear ear protection and enjoy a very good caliber.

go .06 you can buy the biggest range of factory ammo, from 55 grain remington accelerator, to 220 federal and now hornady has 165, and 180 grain light magnums, we don't have an animal that can't be taken with an 06. And you can pick a load that will do the job without ruining meat or hides on anything that you want to hunt.
