Havalon knives have their purpose. Personally, I kind of like sharpening my knives. It's all part of the process of hunting.

I've heard that some taxidermist use a Havalon for delicate work on the head.
However, butchers just use knives they keep sharp. ;) |
Havalons are great for caping out a head. Just as good as a regular Medical Scalpel.

I've used a case xx trapper for skinning and quartering for 20 years, takes on average 20 minutes to skin and quarter 0ne, I cut them up with a 4.5" and a 7" rapala fillete knives

I second the fillet knife. Started out with one and decided to try it one year. Now I've got three of varying lengths. Makes cutting deer up nice and easy.

Haven't tried a havalon. I have more knives than carter has pills, and prefer to sharpen my own. I prefer a short blade for skinning, and use one of my boning knives for the rest of the work. For cutting, I have 4 knife blocks with blades from 24" down for that purpose. You can shave with any one of them. Once you establish your edge, it only takes a couple passes across a steel and a strop to get them back in shape if needed.
