300 win mag. Hard to beat. Lots of factory loads to choose from, probably more .308 bullets to choose from for the handloader than any other caliber. 30-06 is great also, just lacks the power and range of the 300, but under 250 yards works just as well.

270, 150 Nosler Partition, Model 70 Classic Sporter III....
My extended group predonimantly uses the 270 which is one of many reasons why I bought the 270..

Does a Vanguard count

Vanguard 7mm.Rem.Mag./ Burris 3-9X40 Ball Plex/ 150 gr.Winchester Ballistic Silvertips. (I know they destroy meat. Nothing groups nearly as well out of my rifle.)

I would probably go with a .308 180-grain Winchester SuperX Ballistic Silver-Tip, or a a Barnes Triple-X bullet because my .308 is the rifle I'm familiar with, and it doesn't kick much..

Well, if I could go on an elk hunt tomorrow (or if someone wants to take me on an elk hunt = - ) it would be my go to Ruger M77 MKII Stainless Synthetic chambered in 7mm Rem Mag shooting a well constructed 154 grain HornadyInterbond.
