Nerve and lymph tissue is what you want to avoid. There really isn't much of either on the ribs. If you cut the ribs off where the backstrap stops and the ribs begin, you should be fine. Just avoid having the animal processed with the "T-Bone) cut (which is the backstap and the spinal canal) I don't even cut through the spine any more. Simply take the backstrap off in one (or two) big boneless pieces.
