Uhmmmm... Mountain Men is about Mountain Men. Great flick, here is a link to an info page on it.

Jeremiah Johnson has been a favorite since I was a kid. I'll have to check out some of the others.

Second to Jeremiah Johnson would be "The Hunted", with Tommy Lee Jones. The plot is hunting a human, but there are great scenes in the woods of the Pacific Northwest and a Roosevelt elk bull. Another good outdoors movie is "The Edge"
