If your question is serious[not just a 'stir it up' hypothetical], and
If you are looking for unbiased answers, and
If you are wanting someone speaking from experience ("on point" with what you are specifically asked for) rather than emotion,

Then I would encourage you to locate individuals who have a rack of rifles that spans those cartridges (and preferrably includes 7mm ultra mag and 8mm Rem mag, and 338 Win mag) and then glean information from them. Your total number of "inputs" will be much less but much more relevant as issues such as: caliber spacing within what may become your future rack of rifles, trade offs between larger and medium and smaller calibers, recoil, muzzle blast, weight, hunting styles, amount and type of practicing you do can be discussed rationally. Otherwise the mainstay rifle that most folks hang their hat on and the pride associated with it begins to interfere and the "chat room" factor can run rather high.

Consider surfing the threads here and email the players you consider relevent and arrange a phone conversation.

All are more than adequate for elk but if you're looking for comparitive pros and cons I'll give you my opinion. I'm not real familiar with the 8mm so I'll have to leave that out. I would take the 7mm Ultra mag over the 338 because it shoots flatter and carries energy better at long ranges although the advantage isn't a whole lot. The 7mm will also have less recoil and should weigh less. The 338 will put an elk down with more authority but I still like the 7mm between the 2.

If you want the weapon to hit an elk at distance, go with the flat shooter.

If you want insurance on killing an elk at any distance, I can't imagine a 7mm being superior to the heavy bullet, and bigger hole of the 338.
