Moose..nasty
! I love moose meat, then again I have never had it with capers or prepared by a Czech! James, wow must be what your used too. I haven't found any mule deer that tasted better then elk or moose in Saskatchewan. I am not referring to merinade butjust slapped on theQ,seasoned like a beef steak & cooked rare of course!;)Once you merinade you are introducing flavor and can easily mask it as well. I hate lamb straight but asSHASHLYK I love it - why it tastes like garlic, onions and lots of lemon! |

I have never used a merinade of any kind on any meat. I like meat to taste like meat. I either Roast it or chicken fry it or can it. Just like beef. I never shoot anything for meat except does of any species. I have the meat cut and on ice within eight hours of the kill. Mule deer, whitetail, elk and black bear. I like it all. I have eaten some very good moose but also moose can be the rankest stuff on the planet. I had one old bull that my dogs wouldn't even eat. All of our deer are grain fed farm country deer that feed 95 percent on grain and alfalfa.

I guess a lot depends on your own taste and how you were raised.
I for example was raised eating wild game. I would guess that in my early years any meat I ate was of the "wild"variety. I remember eating hamburgers at a friends house and asking why they where so plain tasting. The mother wasn't offended she just explained that it was "cow" hamburger not Deer burger. So for me I like Mule deer. Its a bit gamey though, and my wife and kids don't like it. Moose is very good to my palate as is caribou. I've heard folks bad mouth antelope but I like it, dipped in butter milk, rolled in flour, and fried. Now Elk, anyone who doesn't like elk meat is just plain wierd. |

to me mule deer dont taste any different then whitetail. but then thats in comparison of mule deer buck to whitetail buck never had mule deer doe Id imagine its as good tasting as a whitetail doe. Ill eat it all but really prefer doe meat for steaks usually use the buck meat for burger since the meat is much tougher then that of a doe's. im with james B I dont use marinade on game meat either I like meat to taste like meat I might put a little fresh ground black pepper on a deer steak for a little zing.
but also if you need to marinade your game meat in order for you to eat it then you'd better do it. because if I ever hear of any of you not eating what you kill you will lose alot of respect I may have had for ya[:@] |

I tried the Czech European Red Deer recently and boy was gooooooooooooood!!!!:DHas anybody tried Red Deer or Axis or Fallow or something like that? How was it?:eek: |
