Caribou Backstraps...
Just wanted to let you know I had some backstraps from the caribou I harvested last september... Seasoned them with rosemary, thyme, salt (after they were cooked) and pepper and grilled them inside in butter. that's it...
I know there are a lot of Elk lovers in this forum, but I have never had any elk that tasted this good nor was so tender... We didn't even take the knifes out except to put some butter on the potatoes... Wow, was that good. Cheers, |

I heard carriboo is all stringy and nasty tasting. That discouraged me from hunting them.

Not sure about about barren ground caribou but woodland caribou stags do taste nasty if killed during the rut (middle of October here in Newfoundland).
Me -n- Dad wait until the second week of November to start caribou hunting. Gives the stags a chance to recover from the rut and eat a little weight back on. Unfortunately we didn't get a license in the draw this year. |

I've harvested a LOT of caribou, and i've neverhad a bad one... They are quite good, and i'd much rather be eating caribou than moose any day!!!
