Biscuit , what you described sounds about write. You should check into processing your own deer. I’ve been doing it for years and get the satisfaction of knowing that the meet is deboned, clean with no hair and that it’s all mine. You should check it out.
Just one thing, you can’t make jerky with ground meat as Skeeter mentioned unless he had granulated jerky in mind which I have never seen. For jerky you require long thin strips of meat. The best cut for jerky is flank steak. Enjoy your deer meat.
