its the gizzard, throughout its life turkeys and chickens eat what iss termed grit, could be sand, gravel, anything hard. we used to feed out chickens oyster shell chips for grit, these go to the gizzard, then the hard chips along with the strong muscles of the gizzard basicly grind up the nut and grains that turkeys eat.
and yes they should always be included with the giblets.

it didint look like it when i cut it open, i cut open a gizzard before and it was hard and rough. When i cut this open it was a bit softer and it had some weird webbing stuff inside almost like veins. I saw a gizzard in the bag and this one wasint a gizzard. It dose look like one though . I might be wrong though. If you look at the second picture you can see what i mean .
