Inner layer of wicking fabric long underwear tops and bottoms: polypropylene or other wicking fabric. Outer layer of light wool -- long sleeved shirt, medium weight wool pants. Carry waterproof gear for rain, probably preferrably Goretex which is reasonably breathable. On the other hand, there isn't going to be any perfect fabric if you are running. When I run I sweat a lot and my outerwear becomes soaked. No fabric is going to remain dry under those conditions.
With reference to the durable constraint, I don't know how to answer you. Wear a set of leather chaps and a leather jacket? Not too cool, not very light, not very breathable. Just about any non-leather shell I know about is going to get ripped when running through brush. Canvas or tightly woven cotton shell? such as is used for upland game hunting?
