The wild salmon is no doubt processed commercially by those that have the licenses and permits to do so. Most "wild" game meat you can buy at the store or in a restaurant has been raised on game farms and not harvested by hunters. It is the same with fish. Trout bought at the grocery store was likely raised on fish farms, not bought from individual anglers.
I'm just saying that most states restrict sales of edible portions of game birds/animals/fish... You will want to ascertain the laws in your state (as you would no doubt be buying from local hunters) to ensure no one got in trouble.
