You're not going to find a processor near Aspen. Will have to go down valley clear to I-70 and then to Gypsum if you are heading home toward Denver. If your are heading home to the West there is one in Silt and another I believe in Rifle. It's about an 90 min drive one way. There might be one on the other side of Independence pass in Leadville or Buena Vista I'm not sure.
