Default Encore pistol for deer

I am in the process of working up a load for my .308 Encore pistol for use on deer this year.
According to the Sierra manual, they say that the two top choices would be the 135 gr. SSP, or the 125 gr. Spitzer.
In the area I hunt, due to the terrain, no shots are possible at over 200 yards.
I have a bunch 125 grainers in stock, and I am wondering if they will be able to take a deer down with a shoulder hit, or will they break up on impact, leaving a wrecked shoulder and a long tracking job. I really try to put the bullet behind the shoulder, but "stuff" happens.
If anyone has had any experience with either of these bullets in a pistol, please let me know what you think.
MV of the 125 gr. is 2600 fps, and MV of the 135 is 2300 fps.
