I take mine to have processed for many reasons. The biggest are time and weather. Deer season here is usually below freezing and often a foot or two of snow on the ground. I have no outside water in the winter and I have a disease that prevents my hands from working in cold temperatures. In the summer, I butcher around 100 chickens on the farm so I have my fill of eviscerating, cutting and wrapping meat by the end of summer. Plus I know the processor guy personally so that helps a lot. I work a full time job and to me, my hard earned money is worth it to pay someone else to do a job that I would physically have a hard time doing in the colder weather.
