Straight means just that, straight with your arrow.

Helical left or right wraps around your arrow. Being helical wraps around the arrow it creates more air drag than straight. Air drag by your fletch is crucial for them to steer or stabilize your arrow. The faster or quicker you get your arrows spinning, the less likely the front end/broadhead will steer or plane your arrow off course.
