The last deer I took.....I didn't recover until the next mroning. I never gutted this deer, period. I quartered it and removed the backstraps without gutting her......for the sake of time.
10 minutes is about right to field dress a deer. When the circumstances are right.....I do this ASAP.
I haven't gutted one in over 10 years.
I also process my own.
Hang him, peel the hide down to his chin.
Cut the back strap,shoulders off.
Make two small holes just behind the ribs (Be careful not to puncture the guts),
Reach in there, find the tenderloins grab em and gently pull and twist they come right out.
Cut around the butt hole and let it drop into the body cavity.
Cut the hams off.
Wrap the carcass in the hide and dispose of it.
No mess very little blood.
I don't eat the heart or liver - So there is no reason to disturb the guts.
Put the meat on ice in a cooler take it to the processor or cut it up yourself.
Naturally if you like to hang your deer for several days this won't work.
I like to leave mine on ice for 3 days or so and then cut, wrap and pack.
All this being said - If you want to gut one - Grab it and growl !!!!!!!!
The YOU TUBE video is pretty good.
It is not that hard.
