I know I'm not NCLeatherstocking, so I can't really speak for him, but I think that there are some religious/Scriptural reasons to avoid hunting on the Sabbath (which, historically is actually from sunset on Friday to sunset on Saturday). Later revisions have taken "Sabbath" to mean any particular day of the week one sets aside for corporate (a body of people) worship of God, and the principle is that this day is to be set aside as "different" and be taken as "a day of rest."
There are many interpretations of these Scriptures that allow for recreation on "the Sabbath", some simple and some complex, as well as many (usually quite simple, because it's how the text reads at first glance) that show disdain for activities other than attending church, study, and napping on "the Sabbath." My guess is that the gentleman falls into the category of people who see a Scriptural mandate not to do ________ on "the Sabbath" out of respect for God and His Word.
