If you love turtle, you should try turtle sauce piquante. Soft-shell turtle is good too. I have a cousin who lives on the Imperial river in southwest Florida. In late summer you can fish with rod-n-reel with cut mullet for bait and catch soft-shells until your arms ache.
Ive got alot of softshells in my lake in my back yard, they're easy to catch on a pole with cut bait and they're just as good as snappers but a snapper tends to get bigger and have more meat.
