I just paid $60 for the basic butchering and an additional $32 to have all but the loins, 4 roasts, and the steaks made into summer sausage. I should have a mess of summer sausage, but I'll trade some of that for my buddy's burger.

I have talked to the wife about how expensive it is and shouldn't we think of doing it ourselves since I can get two a year here in Nebraska. She is still holding to the "no mess, no fuss, done right" slogan and that wants me to still take it them to the butcher, regardless of cost. I'm going into PA to hunt with my dad and uncle and they are gonna give me a thorough butchering lesson, though. They have been doing it all their lives.
