Venison Mexican Pot Pie
- 1 can (8oz) Tomato sauce
2 tbsp Margarine
1 lb Venison Burger
1/4 cup Onion (chopped)
3 tbsp dry Enchilada Sauce Mix
1/2 cup Water
1 can (4oz) diced green chilies, drained
1 can (10oz) corn niblets, drained
1 pkg Cornbread mix (8 inch square pan size)
1/2 cup Cheddar cheese or Monterey jack (shredded)
- In a skillet, melt margarine and brown and crumble burger
Add onions and cook for about 5 minutes.
Stir in rest of ingredients, except cornbread mix and cheese
Simmer for 10 minutes, stirring occasionally. Make up cornbread according to directions on package
Pour Venison mixture into an 8x8 pan.
Top with cornbread and sprinkle with cheese.
Bake at 350 degrees for 30 minutes or until cornbread is done. Let set 5 minutes and it will be easier to slice.
