  • 1 1/2 pounds of alligator tail meat, cut into 3/4-inch cubes
    2 eggs, beaten
    1/4 cup plus 2 tablespoons of all purpose flour
    1 teaspoon salt
    4 cups vegetable oil for deep-frying
    1 cup pineapple juice
    1/3 cup firmly packed brown sugar
    3 tablespoons cornstarch
    1/8 ounce can tomato sauce
    1/3 cup cider vinegar
    2/3 cup of deuce (cooked/uncooked)
    1/2 teaspoon garlic salt
    1/4 teaspoon black pepper
    1/8-ounce can unsweetened pineapple chunks, drained
    2 cups diced cantelope

The real test here is bagging yourself a decent-sized alligator, but if I can do it, then you can too.
