  • 2 rabbits,cut up
    4 thickslices of bread
    1tbls. oil
    2/3 cup flour
    1/2 tsp. white pepper
    1 cup chicken broth
    2 cups water
    1/4 lb. shitake mushrooms,sliced
    1/4 lb. white mushrooms,sliced
    4 med. potatoes,peeled and cut into bite-size pieces
    2 med. onions,sliced into rings
    2 cloves garlic,peeled and crushed
    1/4 cup snipped parsley
    1/2 tsp. salt
    1 cup sour cream and white pepper to taste


  1. cook bacon
    add oil to bacon drippings
    place the flour,onetsp. of salt pepper in plastic bag
    add the rabbit and shake to coat well
    fry the rabbit in the bacon grease until brown
    add chicken broth,water,mushrooms,potatoes,onions,garlic,salt, pepper and bacon
    cover and place in preheated oven at 350 degrees bake for 45 min. to one hourr
    remove from oven and stir in the sour cream. Serve with buttered little carrots and a glass of dark ale
