  • 2 pheasants-deboned
    1.5 -2 # of thick sliced bacon
    seasonings of your choice


  1. debone bird
    cut pieces into 1-1.5" long 1/2' thick strips/chunks
    mix white and dark meat if you want
    wrap meat pieces/chunks with half piece of bacon
    secure bacon with toothpicks
    apply seasonings at step3-4 or 4-5
    put chunks on broiler pan
    heat oven- broiler
    turn chunks every few minutes to keep from burning bacon
    cooking time varies with thickness of chunks


This will make you wonder what the poor people are eating as you will feel like a king. works well with chicken, wild turkey, and especially grouse
