  • 4 dressed cut-up young squirrels
    1 cup flour
    salt and pepper to taste
    cooking oil


  1. In an iron skillet add 1/4 to 1/2 in of cooking oil
    Bring oil temp to 325 deg
    Roll squirrel pieces in seasoned flour
    Placed coated pieces in hot oil, browning on both sides
    When browned, reduce heat and cover until pieces are fork tender
    Remove pieces from skillet
    Use oil in skillet to make gravy and serve over bisquits
