Baked Rabbit in Buttermilk
- 1 rabbit cut up.
2 cups buttermilk.
2 tablespoons melted butter.
4 strips bacon.
2 cups breadcrumbs.
1/2 teaspoon salt.
1/2 teaspoon pepper.
- Place rabbit in small roaster or casserole dish.
Combine butter and bread crumbs;spread over rabbit and add seasoning.
Cover with buttermilk,top with bacon strips.
Bake at 350 degrees for 2 hours.
Bake for 2 hours or until meat is tender.
