Usually 1 day. That's mostly because the family doesn't want it in theoutbuildingmore than that. So it's kill on friday, let it cool overnight (been in the 30's here), process on Saturday

We would let them hang over two weeks in colorado but in mississippi its just too dang hot

The really expensive beef you get in 5 stars restaurants usually hangs about 5 weeks at 36-38 degrees F.

depends on the temperature and weather conditions. but we usually do it 1-3 days after

The most I've let mine hang is 6 days but that was the only time I had access to a walk in cooler so I could control temps. Usually though I have them cut up withing 2 days due to not being able to control temps and humidity.

The university of Georgia did a study years ago and they determined through extensive testing that it is best left for 10 days at 40 degrees. If its warmer, leave it hang shorter, colder and it needs to be hung longer. Of course as it approaches freezing the process almost stops or slows considerably.

If you do process sooner you should let it thaw and sit in the fridge for several days to let the microbes break down the muscle tissue for tender eating.

Mine typically hang afew days....then go on ice a few more until I have time to work them up to go in the freezer. This year my sons buck was killed last monday - hung till Saturday then went on ice. I cut him up last night (9 days total). In 20yrs of doing it this way, I've always had good meat - never an issue.

I have a friend that lets his meat hang a LOOONNNNGGG time, weeks if its cold enough.

depends totally on the temp anywhere from 1 week to processing it as soon as we get it back to camp.

We typically let ours hang if its in the thirtys and twentys at nite around 2 weeks. My dad use to work at a butcher shop and he refuses to let them hang less than a week. We use to take them to a walk in cooler that charged a dollar a day and let them hang a week if it was too warm out.;)

This is why I use a steak hammer.............lol......I never let one hang more than 2 days. I've had backstraps and liver the same day of the kill before and it was just as good and any I ever had.

The key issue is temperature outside, or where the deer is hanging. I shot 2 deer in a week and had both of them skinned and quartered the same day because the temps were high 50's to low 60's. I packed them in coolers with ice for a week and then soaked in water in refrigerator for 2 days before packaged and stored in freezer.

I wish it would have been cooler so I could hang for a couple days at the least to let all the blood drain from the meat. That is usually the purpose of hanging them is to let the blood drain from the meat.

I don't hang my deer. I skin and quarter the deer right after killing it. I then put the meat in an ice chest. I usually cut it up two or three days later. It then sits in the fridge for a few more days before I freeze it. In all, the meat usuallystays on ice and inthe fridge 6 to 7 days.

Since I don't hunt close to home, I usually let my deer hang anywhere from 2 to 6 days depending on the weather. In the 30's I have no worries about it. I usually hang them at camp and then again when I get home. I try to get to them ASAP when I get home, but if the weather is right, I'll let them hang for a bit. As long as the weather is right, you can let a deer hang for a while.

4 or 5 days. I have access to a cooler and use it in early season, if I get lucky this weekend I'll probably hang it in my garage. The temps should be low enough.

I seldom "age"more than 72 hours. In most cases, I will gut, skin and quarter the deer ASAP. I remove as much of the hair as I can, remove coagulated blood and cut away all of the damaged meat.I then clean and cool the remaining meat in a cold water bath, pouring off the "heated" water 3-4 times.I do this to thoroughly clean the meat and optimize the life of the ice. Then I ice it throughly and periodically pour off the melt-water. 99% of the time I use a processor rather than butcher it myself.

I like to let 'em hang for as long as the weather allows...in the garage it stays around 35-40* in the winter so I've had deer hang almost 3 weeks cause I forgot about it...lol...but it was awsome eating....and no bloody cleanup in the garage either...another bonus.

I would bet that a whole lot of people have ruined their meat by letting it hang too long. I don't think there is a bit of difference in the taste by letting them hang, just more likelihood of having it spoil. It's funny how many people will swear by this hanging business and then they will proceed to chop the whole deer up into jerky and burger! Doesn't make a whole lot of sense to me really.
