Default Sandhill Cranes?

Anyone ever shoot and eat a sandhill crane? I'm in south Texas and had an extreme amount of them show up last December. I read online that they are tasty. Some refer to them as "Ribeye In The Sky". Worth hunting?

I live in east central NM and we get them here too. I shot three two seasons ago, and have been trying for more ever since. They are excellent table fair. They yield a large dark breast similar to a Greater Canada. Very much worth trying to harvest, you won"™t be disappointed.
