You're welcome. You didn't get it. I guess you aren't from the same part of the south I am.
Anyway, I'll fill you in on how to breast a bird, then when you try to eat it, you will understand what I was getting at.
First, collect marsh hens. High tide, .410 is most sporting as they are about as hard to hit as an empty beer can rolling down a hard surface road. Of course, even though you can shoot lead shot legally, you ought not do it.
Once you have your hens in a row, flip them backside down, peel the feathers away from the breast. Go againest the grain so to speak. Be careful, the skin is delicate. Next, insert a sharp knife (I personally like a fillet knife) right where the ribs make an upside V. Cut down to the backbone, just cutting the skin. you will see the gizzard, and inerds and all that good stuff. When you get down to the backbone, cut up towards the head along the back. Pop the wing joints and cut the breast bone with a pair of pruning shears. You'll have the heart and lungs right there on top where the breast used to be.
Make sure you do it in the kitchen where your wife will have a cow.
As to recipies, there are a few different methods. Some prefer the plank, and others the horse manure. Basically, anything that will work on Merganser or Coot will work on hens as well.
