I find the easiest way to gut a grouse is right after you shoot them stand on their wings(belly facing up) and pull on the legs and all the insides come out then just simply peel the skin back and cut the wings and head off and you've got your self a grouse ready to eat(this is all easiest to do within an hour of killing them i find so all i do is right after i shoot them i do it right there).

For recipes i either cut the breast out and fry them in garlic butter and add seasonings or if i got a bunch of them i cook them just like you would cook a turkey, in a big pot with a lid with a bit of water and the bottom and smoother them in butter and seasonings and uuummm mmmm. Hope you get some.

In my experience, what you do now is miss them alot and get frustrated with your shooting ability as they weave in and out of every conceivable tree in the woods. I could swear that I have seen my dog roll his eyes at me when I do miss

A couple good recipes One Wrap the grouse in bacon. Put a dab of butter under it and bake it at 350 for 30 min or so. Another fillet the meat off the breast then u have skinless boneless breasts. Use your favorite chicken recipe just sub grouse meat for chicken meat.
