I just seanson the them (I like Tony Chacarae's, may be hard to find depending on where you live, it's a Cajun seasoning) and grill them. Most wrap them in bacon, usually with a jalapeno but I prefer mine plain.

Just dip in egg and roll in shoreline batter. Then deep fat fry in oil( prefer peanut oil). Just like a chicken nugget.

The first place where I ever went dove hunting had a Mexican lady who cooked dove for us. I could never replicate it, but, instead of dipping in egg, I think she dipped them in tabasco sauce, and then breaded and deep fried them. They were quite tasty and packed a bit of a kick!

Let sit Italian dressing. Take a sliver of onion, green pepper, and jalapeno (if you like hot) and place on the breast. Wrap the whole thing in bacon and tooth pick to hold in place. Put some tin foil on the BBQ and grill at low temp.
