What tricks are there for simplifying the dressing and plucking phase?

soak in boiling water for a few seconds, helps the feathers come out.....or you can just breast it out, lol.....thats so much easier

I soak the bird in boiling hot water just for a few minutes. This makes the bird's feathers come out really, really easily (almost too easy) or I will breast the bird. Just cut the two big, big pieces of meat off of the breast by taking your knife right down the breast bone / rib cage.

Breasting it all the way. Cut them up in strips and fry. It's hard to beat.

I used to do the boiling in water and plucked them bit but I only breast them out now. I have never found a way to cook their legs where you can eat them. They're like iron. I have heard of boiling their legsfor noodles and stuff like that but I will pass on that.

I skin the legs too. They aren't as versatile as the breast for cooking. But toss them in a pressure cooker and they come out nice and tender. Makes good sandwich meat.

I just pluck out the belly enough get started, then I skin them.
