The problem usually is the sun rises in the east and sets in the west. The two times you are most likely to get pics of deer during shooting hours is also going to be when the sun is glaring into the camera or casting shadows onto the ground in the cameras FOV. I angle my cams in a more Northern or Southern direction by finding one, two or more curves that exists in every deer run I have ever come across. I guess you could continually screw with your camera settings every week, but I prefer to let my cameras out for weeks at a time without repeated trips risking spooking the deer prior to the season opening.
Why not try setting up where the majority of tracks cross the stream being that it runs north to south, at least you will be able to pattern them more effectively.
