Correct. Helical is twisting around the arrow. Offset is, well, for lack of a better word, cutting across the arrow. If that makes sense. Imagine you draw a line square to the arrow, down the length of the arrow. If you fletched straight with no offset, the feather would run right down the line. If you offset the feather, it will start on one side of the line and end on the other side of the line. Make sense?
Oh, and to answer the question, you set the offset with the jig, not the clamp, so either will work.
