With doves the question isn't how much, it is who can do one. Be VERY VERY picky about who you take this dove to. Mourning doves are one of the hardest birds on earth to mount, and even harder to make them look good. The best bird taxidermists can still struggle with a dove. There are only a handful of taxidermists that I would even consider for a dove mount. Good luck

I do doves, but I ask that you bring in a couple since they have a tendency to fall apart especially when hit hard with shot.

I don't take a dove that's being shot at all, the best is to trap them and then Gas them, hardly anybody can wash and fluff dove feathers.
