Default European Mounts

I really like the look of the European mounts and was wondering if somebody would give me some information or tell me where i could get some information on how to do them. What all do you have to do? Is it hard? I've never done anything like this before, do you recomend it?

this is basically how i do it.......http://www.wildlifeartistry.com/hints-european.htm and they turn out pretty well.
