Your video - it appears you missed some of the breast meat if you went so far to fillet all around the crop and remove that.



From the above photo using the small fillet knife one would cut as you did angling into the keel bone and then right down thru the breast.

Compare this breast size to the piece you cut from your video.

and you can see what is left on the body of the bird after it is cut.
