RE: what is the best way to cook a rabbit?
DO NOT....i repeat DO NOT boil them for an hour like someone else posted....like any other meat this will ruin the flavour and possibly make it tough.
it only takes 15 minutes or so to boil a whole rabbit until its done....
i have been cookin rabbit and squirrell (taste exactly the same) for 5 years now. i cook about 25-30 squirrells a year and about 12-14 rabbits a year. and trust me i have cooked them many different ways.
i usually cook them for family gathering and such and by far, the most popular way that everyone likes (about 20 ppl outta 23 or 24) is dip the cut up rabbit/squirrel in beaten eggs and then toss them in good ol shake n' bake u get from the store (or make your own mixture with bread crumbs) and deep fry...yes deep fry....in oil thats about 300 - 325 farenheit. put the largest pieces in first and then wait a few minutes and put the smaller pieces in. leave them in there cookin away...checking them every 2-3 minutes after the first 5 minutes. this is the best way i have found for having the most juiciest, best tasting rabbit and squirrel. u must not over cook or it'll be tough. take them out when 1 minute after the meat has turned brown all the way to the bone.
that was for fresh game or game thats not freezer burnt
now for freezer burnt game. its best to use this in stews, marinade and cook however, or the best yet, squirrell or rabbit burgers (these r awesome wen ground up with bacon) this takes alot of time to debone squirrels if u try to get all of the meat from the animal but its well worth it.
