Well, I took 1 w/ the pellet gun while dressing for the deer stand; skinned it & hung it in the cool shade. Since I was not dragging a deer out, it was squirrel for dinner:
cut into fore and hind
dredge in flour w/ salt& pepper mixed in
heat olive oil in pan
sear squirrel both sides nice & brown
chop up 6 mushrooms or so, add to pan
add1/3 cup white wine
cover & simmer for 45 minutes or so.
falling off the bone tender & delicious!
