I do the same, then serve it on long grain & wild rice.

I prefer to breast it, put a slice of jalepeno in it(cut a small slit right at the top next to the bone), then wrap it in bacon and throw it on the grill.

I either fillet the breast and then wrap in bacon, with or without jalepeno, and grill OR leave the meat on the breast and throw'em in the slow cooker for 8 hours with mushroom soup and serve with wild rice.

best way i've found is right after the hunt to bust out the breasts on the tailgate of the truck. Have a fire going and use a dutch oven with some grease tofry them in. Hard to beat fresh fried dove and a cold beer with your buddies.

I pluck the breast feathers off pulling the skin right off at the same time. Then make a small cut at the point of the breast or just poke your fingers in and pull towards the head while holding down on the back. Then cut off wings, head, the legs should still be attached to the back. Now you should have just the breast. Don't forget to keep the heart and gizzard. They may be small and even smaller when cooked but quite tasty. I just pan-fry in butter. Delicious.
