I learned through books and videos from a company called "WASCO", Wildlife Artist Supply Company. Most of the taxidermy supply companies offer books and videos. WASCO, Mckenzie, Dan Chase, Rinehart's, just to name a few. It's a lot of fun and very rewarding. Good luck and enjoy.
