notice the half eaten mouse in bottom of bed area,, looks like i interrupted this coyotes dinner

It's hard to interupt a coyote eating a mouse... it's merely a gulp immediately after getting the mouse in his teeth.

Not sure what you have there- but coyote and fox generally inhale mice whole and let their digestive system do the chewing. Housecat, mink, hawk or something else is possible but a coyote chewing a mouse is like a human biting off a piece of a tic-tac.
