Depends on what you are doing with it. For a rug it's different than a mount, for trapper tan it's different than both. Some taxidermist like dorsal skinned, some like ventral, some like case skinned. SO we really can't answer your question without more info.

let me add my part to this question....how would you skin it if you are just looking to dry it out and hang it up in your room? to do this would you have to tan it afterwards? thnks

the true answer is skin it how you want, you hear about how people what it skinned but if you just want it skinned for yourself do it how you want.
