I'm not a huge fan of the super steels. In my experience the edge retention is never good enough to justify how hard they are to sharpen.

I find 1095 to be about perfect...holds and edge good...

If you don't butcher/process deer in the field...

If you don't butcher/process deer in the field you should focus way more on butcher knives than hunting knives IMO.

Doesn't take much of a knife to field dress a deer. I carry an outdoor edge...
